Head baker

About the role

KNEAD is a Hong Kong sandwich, salad and catering business with multiple retail locations and a central production kitchen. We are looking for an experienced Head Baker to lead and develop our in-house bread production.

Key responsibilities

• Oversee daily bread and bakery production at our central kitchen
• Produce and develop European-style breads for our retail shops and catering operations
• Manage all stages of production, including dough preparation, fermentation, shaping, proofing and baking
• Maintain consistent product quality and production standards
• Develop and standardize recipes and production procedures
• Plan production schedules and manage ingredient requirements
• Train and supervise kitchen staff in bakery production techniques
• Ensure compliance with food safety, hygiene and quality control standards
• Support the continued development of KNEAD's bread and bakery range

About you

• Minimum 5 years of relevant professional bakery experience
• Strong experience in European-style bread production and fermentation techniques
• Previous supervisory or team leadership experience
• Experience working in a high-volume food production environment is preferred
• Strong knowledge of food safety and hygiene standards
• Good spoken English is required for staff training and daily communication within our multicultural team
• Culinary, bakery or hospitality qualifications are preferred
