Head Chef - Pizza Kitchen

About the role

Pizza Amane Tokyo is looking for a business-minded, technical F&B professional to build and secure our frozen quality stabilization and product innovation pipeline. Reporting conceptually to the Head of Department and working hand-in-hand with our Central Kitchen (CK) Manager, you will be the standalone technical anchor for our fast-expanding manufacturing footprint.

Key responsibilities

• Stabilize frozen pizza dough parameters (fermentation, freezing, thawing) to eliminate batch-to-batch structural variance
• Translate bench-top recipes into scalable central kitchen mass production SOPs and quality checkpoints
• Lead technical client briefings, sample approvals, and commercial spec alignments with corporate clients
• Formulate products to meet strict HACCP, HALAL, MeSTI, and GMP guidelines, keeping all master specification sheets audit-ready
• Support factory equipment evaluations (mixers, blast freezers) and represent the brand's technical R&D at F&B expos

About you

• Bachelor's Degree in Food Science, Food Technology, Food Engineering, Culinary Arts, or equivalent
• Hands-on R&D or culinary experience in a pizza restaurant or commercial bakery environment
• Proven track record of scaling kitchen recipes up to mass production line standards
• Background in frozen food manufacturing, white-label product development, and handling client negotiations in English (preferred)
• Familiarity with local Malaysian regulatory standards (JAKIM Halal, KKM MeSTI/HACCP) is highly advantageous
