We are seeking an experienced and passionate Baker specializing in Indian Bakery & Snacks with strong expertise in Indian mithai (sweets), traditional savory snacks, and baked goods. The ideal candidate will have hands-on experience in bulk production, consistency in taste, and maintaining high standards of food safety and hygiene in a fast-paced retail environment.

Key Responsibilities

• Indian Sweets & Snacks Production
• Prepare and oversee production of traditional Indian sweets (mithai), bakery items, and savory snacks.
• Ensure consistency in taste, texture, sweetness levels, and presentation.
• Maintain proper techniques for sugar syrup, khoa preparation, dough handling, and frying.
• Standardize recipes, portion sizes, and spice levels.
• Introduce new snack varieties and fusion items based on customer preferences.
• Menu Development & Festive Planning
• Develop seasonal and festive offerings (Diwali, Eid, weddings, special events).
• Create gift packs, snack combos, and festive hampers.
• Incorporate regional Indian specialties (Gujarati, Punjabi, Rajasthani, South Indian).
• Maintain balance between innovation and authenticity.
• Kitchen Operations
• Manage daily production, including batch planning and scheduling.
• Monitor ingredient inventory (milk, sugar, ghee, dry fruits, flours, spices).
• Ensure proper storage, FIFO practices, and waste control.
• Maintain cleanliness and hygiene in production areas.
• Ensure proper use of baking and frying equipment.
• Team Leadership & Training
• Supervise and train kitchen staff and assistants.
• Ensure adherence to standard recipes and hygiene protocols.
• Coordinate workflow during peak and festive seasons.
• Compliance & Food Safety
• Ensure compliance with food safety and sanitation standards.
• Monitor shelf life and freshness, especially for milk-based products.
• Maintain proper temperature control and safe handling practices.
• Customer Experience
• Ensure attractive display of sweets and snacks.
• Maintain high standards of packaging and labeling.
• Support sampling and promotional activities.
• Uphold brand quality and presentation standards.

Qualifications & Requirements

• Proven experience as a Baker, Sous Chef, Head Sweet Maker (Halwai), or Production Supervisor in Indian bakery, snacks, and mithai.
• Strong expertise in Indian sweets, savory snacks, deep-frying techniques, and baking.
• Experience in bulk production for retail or catering environments.
• Knowledge of regional Indian recipes.
• Understanding of food safety, hygiene, and sanitation standards.
• Ability to work in a fast-paced, high-volume environment.
• Strong leadership, communication, and organizational skills.
• Culinary or baking certification is an asset.
