What they need
We're relaunching a well-established site in Hockley as a new Indian restaurant, and we're looking for an Indian chef to make wraps, salads, tandoor items and curries.
About the role
We're looking for a skilled Indian Chef to join our founding kitchen team, with responsibility for wraps, salads, tandoor-cooked items, and curries. You'll play a key part in shaping the food offering from day one, helping establish recipes, prep systems and kitchen standards as we open. Candidates must have right to work in the UK.
Key Responsibilities
- Prepare and cook a range of Indian wraps, salads, tandoor items (kebabs, tikka, naan, etc.) and curries to a consistently high standard
- Operate and maintain the tandoor oven safely and effectively
- Marinate, prep and portion meat, fish, paneer and vegetables in line with recipes and food safety standards
- Balance spice, flavour and presentation across dishes, maintaining consistency service after service
- Monitor stock levels for your section and report shortages or quality issues to the Head Chef/Manager
- Ensure correct storage, labelling, and rotation of ingredients (FIFO)
- Maintain a clean, organised, and safe section in line with food hygiene regulations
- Work closely with front-of-house to ensure timely, accurate dish delivery, especially during service peaks
- Support recipe development and menu refinement as the restaurant establishes its identity
- Train and mentor junior kitchen staff as the team grows
Skills & Experience
- Proven experience cooking authentic Indian cuisine, ideally with hands-on tandoor experience
- Strong knowledge of spice blending, marination techniques, and regional Indian curry styles
- Experience preparing fresh salads and wraps to a high presentational standard
- Food hygiene certification (or willingness to obtain one)
- Ability to work efficiently under pressure in a fast-paced, newly opening kitchen
- A collaborative, hands-on attitude — comfortable helping build kitchen systems from scratch
- Good understanding of food safety, allergen management, and kitchen health & safety
What we're looking for
- Proven experience as an Indian chef or senior sous chef, ideally in Indian cuisine
- Strong grounding in traditional techniques, spicing and tandoor cooking
- Level 2 Food Hygiene certificate (or willingness to obtain one)
- Calm under pressure during service, with a genuine passion for food
- Right to work in the UK
What we offer
- Competitive salary, dependent on experience
- The opportunity to help shape the food identity of a brand-new, design-led restaurant
- A dynamic, creative kitchen environment
- Hours/contract type — full/part time/zero hours
- Staff meals on shift
- Room to grow with the business as it establishes itself
