Indian Commi I

A Commis 1, In the context of Indian cuisine (such as Tandoor, Curry, or South Indian stations), a Commis 1 is expected to handle complex food preparation and independent cooking tasks under minimal supervision.

Food Preparation & Cooking: Prepare and cook Indian specialties, including curries, gravies, breads (naan/roti), biryanis, and tandoor items. They must monitor cooking temperatures and times closely to ensure traditional flavor profiles and quality standard operating procedures (SOPs) are consistently met.

• Station Management & Mise en Place: Maintain a highly organized station. They manage the daily setup (mise en place) of fresh ingredients, spices, and base sauces needed for seamless service.
• Leadership & Team Support: Take charge of a specific kitchen section when required. They guide, educate, and mentor junior kitchen staff, such as Commis 2, Commis 3, and trainees.
• Inventory & Stock Control: Accept deliveries, verify ingredient quality, and maintain standard food logs. They practice the FIFO (First In, First Out) method to track ingredient usage and minimize food waste.
• Hygiene & Safety Compliance: Ensure strict adherence to food safety, hygiene protocols, and HACCP guidelines. They must maintain clean workstations and safely operate all commercial kitchen equipment.

Pay: ₹15,000.00 - ₹20,000.00 per month
