The role

We're hiring a Kitchen Manager to run daily candy production. You'll lead the kitchen crew, keep the kettles running on schedule, and make sure every batch meets our quality and food safety standards. Our production goal is 30 batches of brittle a day across 3 kettles, and you'll own the plan to hit it.

You'll report to the owners and work closely with our Production Manager and Assistant Manager.

  • Plan daily production to meet batch targets, and track output, cycle times and waste
  • Find and fix bottlenecks across cooking, cooling, breaking and packing
  • Enforce food safety, sanitation and allergen-control procedures, and keep inspection records current
  • Maintain recipe and quality consistency, including cook temperatures, texture and appearance
  • Manage ingredient inventory, place orders and keep supplies from running short
  • Keep kettles and equipment cleaned, maintained and safe, and flag repairs early
  • Report production numbers and issues to leadership each week

Qualifications

Required

  • 2+ years supervising a commercial kitchen, bakery or food production team
  • Food safety manager certification, or willingness to earn it within 60 days
  • Experience meeting daily production targets
  • Bilingual in English and Spanish
  • Comfortable working around hot sugar, open heat and kettles
  • Able to stand for long periods and lift up to 50 lbs

Preferred

  • Candy, confectionery or sugar-work experience
  • Experience with inventory management and ordering
