Lamination Pastry Chef/Tourier

Overview
Nougatine Bakery is looking for an experienced Lamination Pastry Chef / Tourier to take ownership of our entire viennoiserie lamination program. This position requires strong professional lamination skills, excellent organization, and the ability to maintain high quality while keeping up with production quantities.

Responsibilities:

• Take ownership of the entire lamination program.
• Laminate, shape, and prepare croissants and other viennoiserie.
• Follow production sheets and keep up with daily and weekly quantities.
• Plan production efficiently so products are ready on schedule.
• Maintain consistent sizing, lamination, shaping, and finished product quality.
• Monitor dough and butter temperatures throughout production.
• Minimize waste and communicate production or quality issues.
• Keep the lamination area clean, organized, and ready for the next production cycle.
• Work independently while coordinating with the rest of the bakery team.

Qualifications

• Professional lamination experience is required.
• Strong experience with croissants and laminated dough.
• Comfortable working with a dough sheeter.
• Able to handle high-volume production while maintaining consistency.
• Strong attention to detail and high quality standards.
• Organized and able to manage production quantities without constant supervision.
• Reliable and able to take full responsibility for the lamination program.

Schedule

• This is primarily an afternoon production position and can be structured as full-time or part-time for the right candidate.

Compensation:

• Starting base pay: $23/hour.
• Location: In person, Kitchen 7 - 630 Ralph Ablanedo Dr, Austin Texas 78748
• We are looking for someone who wants to take real ownership of the position and help Nougatine Bakery maintain a consistently high standard as we continue to grow.

Job Type: Part-time

Pay: $22.00 - $23.00 per hour
