Fish Cheeks is a deeply personal concept for Jenn Saesue and Chat Suansilphong that celebrates the cultural heritage and the culinary artistry found in Bangkok and beyond. Brought together by their shared desire to bring traditional Thai cuisine to NYC, the team decided to open Fish Cheeks, offering a menu that highlights the unfiltered flavors they craved from their upbringing in Thailand and re-creates the type of convivial and communal-style dining found across the country - from the street-stalls to fine-dining restaurants.

Fish Cheeks is seeking a dynamic, hospitality-driven Maître d’ who thrives in a fast-paced environment and is serious about hospitality. This role requires strong leadership, excellent communication, and the ability to balance operational efficiency with warm, attentive hospitality.

Responsibilities

• Maintain awareness of the book a week out with specific attention to large party reservations
• Manage daily reservations, waitlists, walk-ins, cancellations, and special requests using Resy
• Provide accurate wait time estimates while strategically maximizing seating capacity and efficiency throughout each table turn
• Oversee table assignments and rotation to support an efficient service
• Delegate to host team seating timelines, requests for table status and soignee distribution
• Adjust seating decisions based on reservations, table availability, restaurant pacing, and guest needs
• Communicate throughout service with servers, management, and the kitchen to support a coordinated operation
• Collaborate with management to proactively address seating challenges and timing concerns, ensuring a smooth and efficient flow of service
• Respond to guest questions and concerns promptly and professionally
• Maintain thorough knowledge of reservation policies, restaurant hours, food and beverage offerings, and service standards
• Lead by example in professionalism, communication, and guest interactions
• Coach hosts on seating, reservation, and waitlist procedures
• Share relevant guest feedback and observations with management
• Help maintain consistency across the host team from shift to shift

Experience & Requirements

• Minimum 2+ years experience as a Maître D’, Lead Host, or comparable front-of-house leadership role in a high-volume, high-standard restaurant
• Mastery of Resy, with a strong sense of pacing, capacity management, and table-turn strategy
• Exceptional communication skills, emotional intelligence, and an ability to remain calm and clear in a fast-paced service environment
• A polished, professional demeanor with genuine hospitality at the core
• Strong organizational skills and a proactive, solutions-oriented mindset
• Availability for nights, weekends, and holidays as needed
