Central to this next chapter is The Bastion Kitchen & Bar, a major new food and beverage concept and the hotel's most significant launch to date. The Bastion will be a destination in its own right, combining stylish interiors, striking castle views, speciality cocktails and relaxed yet refined dining. Its menus will celebrate the exceptional food of the Boyne Valley, showcasing quality local produce and suppliers through creative, flavour-led dishes, modern gastro-style dining and an outstanding Sunday carvery.

We are seeking to recruit an experienced and creative Mixologist to join the Bastion Team.

Duties and Responsibilities of the Role:

Craft a diverse range of cocktails and beverages with creativity and flair

Stay updated on industry trends and introduce innovative drinks to the menu

Collaborate with the Bar Management and F&B team to develop and update the cocktail menu

Ensure a well-balanced and appealing selection of beverages

Provide excellent customer service by engaging with guests, understanding their preferences, and

offering personalised drink recommendations

Educate guests about the ingredients and origins of various drinks

Maintain a well-organised and aesthetically pleasing bar area

Ensure the bar is stocked with high-quality ingredients, garnishes, and glassware

Demonstrate expertise in mixology techniques, including shaking, stirring, muddling, and layering

Showcase a variety of presentation styles to enhance the visual appeal of drinks

Ensure consistency and quality in the preparation and presentation of drinks

Monitor the freshness of ingredients and recommend changes as needed

Engage with guests at the bar, creating a welcoming and lively atmosphere

Provide insights into the hotel's beverage offerings and promotions

Coordinate with the kitchen for the preparation of complementary snacks or appetizers for the bar

Ensure smooth communication between the bar and kitchen staff

Stay informed about industry trends, new spirits, and cocktail techniques

Participate in training sessions for staff development and knowledge sharing

Adhere to responsible service guidelines, including checking identification for age verification.

Monitor guest alcohol consumption and promote responsible drinking.

Requirements for the role:

Proven experience as a Mixologist or Bartender in upscale establishments

In-depth knowledge of spirits, wine, beer, and cocktail recipes

Strong creativity and ability to innovate in mixology

Exceptional customer service and interpersonal skills

Physical stamina and the ability to work in a fast-paced environment

Familiarity with point-of-sale (POS) systems

Certification for responsible beverage service
