OPERATIONS HEAD

ProKore Catering Services is looking for a highly experienced and results-oriented Operations Head to oversee and manage the company's overall catering operations, including central kitchen production, healthcare catering, school catering, and onsite food service operations.

The ideal candidate will have strong leadership capabilities, extensive experience in large-scale catering operations, and a proven track record of achieving operational excellence, cost efficiency, food safety compliance, and customer satisfaction.

Key Responsibilities

• Oversee and manage the company's day-to-day catering operations across central kitchen and client sites.
• Develop and implement operational strategies to improve efficiency, service quality, productivity, and profitability.
• Manage operational teams, including chefs, kitchen staff, QHSE personnel, nutritionists, supervisors, and support staff.
• Ensure compliance with HACCP, food safety standards, Dubai Municipality regulations, and applicable UAE requirements.
• Monitor operational budgets, food costs, labour costs, wastage, and overall financial performance.
• Ensure timely food production, quality control, portion control, packaging, and distribution to client locations.
• Maintain strong relationships with clients and ensure service delivery meets contractual requirements and agreed standards.
• Coordinate with Procurement, Stores, Transport, HR, Finance, and QHSE teams to ensure smooth business operations.
• Establish and monitor operational KPIs, conduct site inspections, and implement corrective actions where required.
• Lead workforce planning, recruitment requirements, staff scheduling, performance evaluations, and employee development.
• Manage new contract mobilisation, operational transitions, and the implementation of new client requirements.
• Identify opportunities for process improvement, cost optimisation, waste reduction, and increased operational efficiency.
• Prepare regular operational reports and present performance updates, challenges, and improvement plans to senior management.

Qualifications and Experience

• Bachelor's degree or diploma in Hospitality Management, Catering Management, Business Administration, or a related discipline.
• Minimum 8–10 years of experience in catering or food service operations, including substantial experience in a senior operational leadership role.
• Proven experience in large-scale catering, central kitchen management, healthcare catering, school catering, or institutional food services.
• Strong knowledge of food safety management systems, HACCP, quality standards, and UAE food safety regulations.
• Demonstrated expertise in budgeting, cost control, operational planning, and managing large teams.
• Excellent leadership, decision-making, communication, and client management skills.
• Ability to manage multiple locations, operational priorities, and demanding service schedules.
• Strong organisational, analytical, and problem-solving abilities.
• A valid UAE driving licence is preferred.
