Outlet Supervisor

Job Purpose

The Outlet Supervisor is responsible for the complete day-to-day operation of the outlet, including sales, customer service, staff management, food safety, stock control, cleanliness, cash handling, and achievement of outlet targets.

1. Sales & Customer Service

• Achieve daily and monthly outlet sales targets.
• Monitor footfall, number of bills, ABV and product-wise sales.
• Ensure staff actively upsell and cross-sell products.
• Ensure every customer is greeted and served professionally.
• Handle customer complaints immediately and ensure proper closure.
• Maintain quick service and order preparation/delivery standards.

2. Staff & Shift Management

• Conduct shift briefing and allocate responsibilities.
• Ensure proper staff attendance, grooming and uniform standards.
• Prepare and maintain duty rosters and manage weekly offs.
• Train staff on products, service, SOPs and customer engagement.
• Monitor staff performance and report discipline/performance issues.

3. Food Safety & Hygiene

• Ensure complete compliance with FSSAI and company food-safety standards.
• Check product expiry, FIFO/FEFO, storage temperatures and labeling.
• Maintain daily chiller/freezer temperature records.
• Ensure kitchen, service counter, displays, washrooms and customer areas are clean.
• Ensure pest-control and cleaning schedules are followed.
• Immediately remove expired, damaged or unsafe products.

4. Stock & Product Management

• Check opening and closing stock.
• Ensure timely indenting based on sales and stock requirements.
• Control wastage, damages and product returns.
• Ensure proper product display, availability and replenishment.
• Avoid both stock-outs and excess inventory.

5. Cash & Billing Control

• Ensure 100% billing of all sales through POS.
• No handwritten/manual KOT unless specifically authorized.
• Verify cash, card, UPI and online sales reconciliation.
• Ensure proper opening/closing cash procedures and timely deposits.
• Immediately report billing or cash discrepancies.

6. Online Orders

• Monitor Swiggy/Zomato orders and avoid unnecessary cancellations.
• Ensure correct packing, product quality and timely order handover.
• Monitor online availability and switch off unavailable products promptly.

7. Outlet Maintenance

• Conduct daily checks of ACs, refrigerators, freezers, ovens, coffee machines, POS, lighting and other equipment.
• Immediately report breakdowns and follow up until closure.
• Ensure signage, menu boards and promotional materials are properly displayed.

8. Reporting

• Submit daily sales and operational reports on time.
• Report customer feedback/complaints and corrective actions.
• Report manpower shortages, maintenance issues and stock concerns.

Maintain required audit, hygiene and operational checklists.
