Great pastry takes creativity, precision and a team that cares about the details. We’re looking for a Pastry Sous Chef who brings all three.
Llanerch Vineyard Hotel combines a working Welsh vineyard, boutique hotel, Roots Restaurant and a busy wedding and events operation. From a carefully finished restaurant dessert to afternoon tea overlooking the vines and a wedding breakfast for a full room of guests, pastry plays a central role in what we do.
Working in our dedicated Lodge Pastry Kitchen, you’ll help lead daily production across restaurant desserts, afternoon tea, cakes, breads, pastries and banqueting. This is a hands-on role for someone who enjoys both the craft of pastry and the organisation needed to deliver it consistently.
The role
Working closely with the senior pastry team and Executive Chef, you will:
- Help organise daily production, balancing restaurant requirements, afternoon tea and upcoming weddings and events.
- Produce desserts, cakes, pastries and baked goods with consistent flavour, texture and presentation.
- Contribute ideas to seasonal menus and the development of our pastry offering.
- Lead by example, supporting junior chefs and helping them build their skills and confidence.
- Take responsibility for the pastry kitchen when required, keeping preparation and service running smoothly.
- Support ordering, stock rotation, portion control and waste reduction.
- Maintain high standards of food safety, allergen control, cleanliness and accurate digital records
- Communicate clearly with the restaurant and events kitchens so every service is properly prepared.
About you
You’ll have a strong pastry background in a quality restaurant, hotel or dedicated pastry operation. You may already be a Pastry Sous Chef, or an experienced Senior Pastry Chef de Partie ready to take the next step.
We’re looking for someone with:
- Strong practical skills across plated desserts, afternoon tea and baking.
- An organised approach to production and the ability to maintain quality at volume.
- A good eye for detail and a clear understanding that flavour comes first.
- The confidence to guide a team with patience, clear communication and high standards.
- Sound knowledge of food safety and allergen management.
- Pride in their work, reliability and a willingness to contribute ideas.
Why Llanerch?
You’ll work within a dedicated pastry department supporting three distinct kitchen operations: Roots Restaurant, Pastry and Events. The variety offers scope to develop your craft, contribute to menus and build your leadership experience in a distinctive vineyard setting.
