Typical Hours: Approximately 3–5 hours per day, with additional hours available depending on prep and cleaning needs. Shifts will generally begin at 7:00AM and end by 2:00 PM at the latest.
About the Position
We are looking for a reliable, experienced Prep Cook / Dough Specialist to take ownership of our morning food preparation and help keep our kitchen clean, organized, and ready for service.
The most important responsibility of this position is preparing our pizza dough. Previous dough-making experience is strongly preferred, particularly experience with pizza dough, bread, or other yeast-raised products.
This is an independent morning position. The right person should be comfortable coming in early, working through an established prep list without constant supervision, and making sure the restaurant is properly prepared for the day.
Once daily food preparation is complete, remaining scheduled time will be spent on cleaning and maintaining areas of the restaurant that do not always receive enough attention during normal service.
Responsibilities
Dough & Food Preparation
- Prepare pizza dough according to our recipes and procedures
- Mix, portion, ball, store, and properly proof dough for service
- Maintain consistent dough quality from batch to batch
- Complete other daily and weekly food preparation, including sauce, cheese, meats, vegetables, and other ingredients
- Monitor prep levels and produce appropriate quantities based on anticipated business
- Properly label, date, rotate, and store prepared food
- Follow FIFO procedures and help minimize unnecessary food waste
- Notify management of quality issues, shortages, or other prep concerns
Cleaning & Organization
- Wash and put away all dishes, containers, utensils, and equipment used during your shift
- Thoroughly clean and sanitize prep surfaces and equipment after use
- Complete assigned deep-cleaning projects once food preparation is finished
- Help address areas of the kitchen and restaurant that need additional cleaning and maintenance
- Keep storage, prep, and work areas clean and organized
- Identify cleaning or maintenance issues that need management's attention
Inventory & Ordering
- Complete a weekly inventory count each Sunday
- Report inventory levels accurately
- Prepare the proposed food/supply order for the upcoming week based on inventory and expected needs
- Alert management to unusual usage, shortages, or potential supply problems
Pizza Production
- Previous pizza-making experience is a plus
- Depending on experience and scheduling needs, this position may once per week be responsible for an opening/lunch pizza-making shift
- Any such shift would still be during daytime hours, ending no later than 2:00 PM
Qualifications
- ServSafe certification required
- Previous commercial kitchen or food-preparation experience preferred
- Dough-making experience strongly preferred, especially pizza dough
- Pizza-making experience is a plus
- Ability to follow recipes accurately and consistently
- Strong understanding of food safety, sanitation, and proper food storage
- Dependable and comfortable working independently with limited supervision
- Able to stay productive after the primary prep work is completed
- Strong attention to cleanliness, organization, and detail
- Able to lift and move ingredients, dough, equipment, and supplies as required in a commercial kitchen
- Reliable transportation and consistent attendance
What We're Looking For
This position is a good fit for someone who takes pride in having a kitchen completely prepared before service begins. We are looking for someone who can eventually take ownership of morning prep, rather than simply waiting to be told what to do next.
A successful person in this role should be able to look at the day's needs, complete the necessary production, clean up after themselves, work through additional cleaning projects, and leave the restaurant in better shape than they found it.
Because dough is the foundation of our pizza, consistency and attention to detail are especially important. We're willing to pay competitively for someone who brings meaningful dough, baking, or pizza experience.
Pay: $16.50 - $19.00 per hour

- 401(k) matching
