Prep Cook - The Oxbow

About Us: The Oxbow American Grill in Ridgeland centers its culinary identity around wood-fired cooking using Mississippi red oak, clean execution, and bold regional flavors.

The Role: As a Prep Cook at The Oxbow, you will prepare high-quality ingredients, stocks, sauces, and station mise en place required for daily kitchen operations. Reporting to the Sous Chef, you will ensure recipe accuracy, consistency, and adherence to strict food safety guidelines.

Key Responsibilities:

• Wash, peel, cut, and portion vegetables, meats, seafood, and other ingredients according to daily prep sheets and recipe specifications.
• Prepare scratch dressings, sauces, marinades, and stocks to exact taste and visual standards.
• Label, date, rotate (FIFO), and store all prepped food items in designated refrigeration and dry storage areas.
• Maintain clean, sanitized work stations, cutting boards, knives, and prep equipment in compliance with health safety standards.

Qualifications:

• 1+ year of prep cook experience in a high-volume scratch kitchen preferred.
• Solid knife skills, understanding of basic cooking techniques, and recipe scaling proficiency.
• Strong time management skills and ability to work efficiently independently or as part of a team.
• Knowledge of food safety standards and safe temperature holding practices.
