CACAO Australia is a leading artisan producer of premium macarons and chocolates, proudly crafting exceptional products for retail, wholesale and seasonal gifting markets.

We are seeking an experienced Production Manager – Pastry to lead our production operations and a team of more than 30 employees at our Cheltenham facility.

This is a hands-on leadership role suited to an experienced production or manufacturing leader, with a strong preference for candidates who also bring a pastry, patisserie or commercial kitchen background.

The Opportunity

As Production Manager, you will be responsible for the day-to-day management of our macaron and chocolate manufacturing operations, ensuring production targets are achieved while maintaining high standards of quality, food safety and efficiency.

You will lead the production team, coordinate manufacturing schedules, oversee factory-floor operations and work closely with other departments to ensure products are delivered on time and to CACAO's standards.

The role will also play an important part in improving production systems, processes and productivity as the business continues to grow.

Key Responsibilities

• Lead daily macaron and chocolate production, ensuring quality, efficiency and consistency.
• Manage, develop and motivate a production team of 30+ employees.
• Plan production schedules and monitor output, productivity and yields to meet customer demand.
• Oversee factory-floor operations, including safety, cleanliness, food safety and HACCP/GMP compliance.
• Coordinate with procurement, logistics and other teams to ensure production requirements are met.
• Drive continuous improvement across processes, equipment utilisation, productivity and team performance.

The Ideal Candidate

• Experience working in a food manufacturing or high-volume production environment
• Strong organisational and planning skills
• Confidence working directly on the factory floor
• The ability to manage and lead across multiple teams and departments
• Clear, confident communication and leadership skills
• A background in operations, production, or manufacturing (ideally within the food industry)
• A proactive, hands-on approach to team management and process improvement
• Strong understanding of HACCP, GMP, and food safety compliance.
• Passion for artisan food production and product excellence.
