Purchasing Manager – Restaurant

We are looking for an experienced Purchasing Manager to join our restaurant team in Dubai.

The ideal candidate should have strong experience in supplier management, purchasing, cost control, stock/inventory management, and price negotiation, preferably within the restaurant, F&B, or hospitality industry.

Key Responsibilities

• Manage all purchasing activities for food, beverages, packaging, cleaning materials, maintenance items, and other restaurant requirements.
• Source and develop reliable suppliers with competitive pricing and consistent quality.
• Negotiate prices, payment terms, delivery schedules, and supplier contracts.
• Regularly compare supplier prices and identify opportunities to reduce purchasing costs.
• Maintain strong professional relationships with existing suppliers.
• Monitor daily and weekly stock levels to prevent overstocking, shortages, and unnecessary purchases.
• Control inventory movement and ensure physical stock matches system records.
• Conduct regular stock counts and investigate stock discrepancies.
• Monitor food cost, beverage cost, wastage, and purchasing variances.
• Work closely with the Chef, Bar, Shisha, Operations, Accounting, and Management teams.
• Maintain updated supplier lists, price lists, purchase records, invoices, and supporting documentation.
• Ensure all received products meet required quality, quantity, and specification standards.
• Monitor product expiry dates and support proper FIFO stock rotation.
• Identify high-cost items and suggest alternative suppliers or products without compromising quality.
• Prepare purchasing, stock, cost-control, and supplier performance reports for management.

Requirements

• Minimum 2–3 years of experience in Purchasing / Procurement, preferably in restaurants, hotels, catering, or F&B.
• Strong knowledge of supplier management and price negotiation.
• Good understanding of food cost and cost-control procedures.
• Strong knowledge of stock and inventory control.
• Experience with purchase orders, invoices, receiving, and stock reconciliation.
• Good Excel and reporting skills.
• Strong analytical and organizational skills.
• Able to work independently and take responsibility for purchasing results.
• Good communication and negotiation skills.
• Knowledge of the Dubai/UAE F&B supplier market is highly preferred.
