Key Responsibilities:

• Lead R&D and end-to-end menu development for a new brand, covering both food and bakery.
• Develop and test recipes for sourdough, bagels, paninis, sandwiches, pastries, salads, and light meals.
• Prepare recipe cards, SOPs, and prep guides to ensure consistent execution across branches.
• Control food quality, food cost, stock, and food waste.
• Prepare reports on quality, cost, stock, and product development.

Qualifications:

• Experience in Bakery, Culinary R&D, or Product Development.
• Hands-on experience with sourdough and bagels, with a good understanding of dough fermentation.
• Able to develop panini, sandwich, and savoury food menus.
• Experience in recipe development and preparing recipes/SOPs.
• Good understanding of costing, food cost, stock, and waste control.
• Able to test, develop, and refine recipes for commercial production.
• Able to travel to branches as required.
