What they need

Restaurant & Bar Manager

Lead a premium F&B operation across premium hotel outlets

Are you a hands-on hospitality leader who thrives in a luxury environment?
We’re looking for an experienced Restaurant & Bar Manager to take the lead across a premium hotel’s Food & Beverage operation, overseeing restaurant, bar, In-Room Dining and minibar.

This is a highly visible leadership role for someone who understands that luxury hospitality is about the detail, knowing your guests, developing your team and ensuring every service runs seamlessly.

What’s in it for you?

  • Lead a sophisticated, multi-outlet hotel F&B operation
  • Work within a luxury hospitality environment where service standards really matter
  • Lead, coach and develop a passionate team
  • Have genuine influence over guest experience, operational standards and commercial performance
  • Work alongside experienced culinary, events and hotel leadership teams
  • Join an environment where professionalism, presentation and personalised service are valued
  • Opportunity to make your mark and continue developing your career within a premium hotel operation

About the role

You’ll be responsible for the day-to-day leadership of the hotel’s F&B outlets, ensuring every service period is operationally ready and delivered to a consistently high standard.

Your responsibilities will include:

  • Leading restaurant, bar, In-Room Dining and minibar operations
  • Being visible and hands-on during key service periods
  • Maintaining luxury service, presentation, grooming and operational standards
  • Building strong relationships with VIP, regular and returning guests
  • Anticipating guest needs and delivering personalised service
  • Managing guest feedback, complaints and service recovery
  • Working closely with the Executive Chef, Events, F&B and wider hotel teams
  • Managing opening and closing procedures and operational readiness
  • Taking ownership of operational or guest issues and providing leadership when senior management is unavailable

Lead, coach & develop your team
This role is as much about people as it is about operations.
You’ll recruit, train and develop your team while creating a culture built around genuine hospitality, accountability and service excellence.

You’ll be responsible for:

  • Team leadership, performance management and development
  • Training across service standards, product knowledge, wine and beverages
  • Developing suggestive selling and guest engagement skills
  • RSA, dietary and allergen awareness
  • Team briefings, communication and cross-department collaboration
  • Rostering and maintaining appropriate staffing levels
  • Creating an inclusive, positive and professional team environment

Commercially minded leadership
You’ll also have a strong understanding of the numbers behind a successful F&B operation.

You’ll be involved in:

  • Revenue and profitability
  • Labour and wage control
  • Rostering and payroll
  • Stock ordering, inventory, stocktake and variance investigation
  • KPI and operational reporting
  • Monthly business reviews
  • Identifying opportunities to improve revenue and efficiency
  • Setting departmental targets and driving continuous improvement

About you:

You are an experienced hospitality leader who combines high service standards with strong operational and commercial awareness.

Ideally, you’ll bring:

  • Previous hotel or resort F&B management experience
  • Experience in a Restaurant Manager, F&B Manager or similar senior role
  • Experience managing multiple outlets or complex hospitality operations
  • A genuine passion for luxury guest experience
  • Strong food, beverage, wine and cocktail knowledge
  • Confidence managing guest complaints and service recovery
  • Proven ability to lead, coach and develop teams
  • Strong understanding of labour, stock and financial controls
  • Knowledge of RSA, food safety, WHS and relevant hospitality legislation
  • Excellent communication and relationship-building skills
  • Strong POS, computer and reporting skills
  • A calm, professional approach when the pressure is on
  • Impeccable personal presentation and an exceptional eye for detail

Most importantly, you’ll be someone who leads from the floor, knows what great service looks like and genuinely enjoys developing people.

If you're ready to step into a senior role where luxury service, people leadership and commercial performance all come together, we'd love to hear from you.
