Bamboo Sky is a growing, independent Thai restaurant, bar and destination venue with private dining domes and magical gardens. Proud winners of Thai Restaurant of the Year, East of England, at the Asian Restaurant Awards 2026, we offer something a little out of the ordinary.
We’re looking for an experienced, hands-on Restaurant Manager who combines warm hospitality with strong organisation, commercial awareness and the ability to bring out the best in a small team.
Working closely with the owner, you’ll take responsibility for the day-to-day running of the restaurant, bar and dome dining experiences, helping us build a consistently excellent business as we grow.
The role
- Lead service confidently, creating a welcoming experience and handling guest feedback professionally.
- Recruit, train and motivate the team, setting clear standards and following through.
- Manage rotas and staffing levels in line with bookings, service needs and wage budgets.
- Oversee bar operations, including stock control, ordering, drinks standards and wastage.
- Work closely with the chefs to maintain food quality, presentation, timing and communication between kitchen and front of house.
- Oversee kitchen checks and records, ensuring food safety, allergen procedures, cleaning and compliance standards are consistently maintained.
- Manage food and drink gross profit (GP), stocktakes, purchasing and portion control alongside the kitchen team and owner.
- Keep bookings, deposits, private events and special requests organised and clearly communicated.
- Maintain high standards throughout the venue, spotting maintenance issues and resolving problems promptly.
- Bring ideas to improve sales, service and efficiency—and see them through.
About you
You’ll have proven experience managing a restaurant, including bar operations and oversight of kitchen standards and compliance. You’ll understand GP, wage costs and stock control, and know how to turn those figures into sensible daily decisions.
You’ll be a confident trainer and a fair, supportive leader who earns respect by being present, consistent and willing to get involved. We need someone proactive and dependable, who plans ahead, takes ownership and stays calm when service gets busy.
Above all, you’ll care about the details that make guests feel looked after and help a small, personable business thrive.
Available to start early-mid November.
To apply, please send your CV and a short covering note explaining your relevant experience and why you’d like to join Bamboo Sky.
