About the Role

Bombay Brasserie, is looking for experienced Restaurant Managers to lead our outlets. The ideal candidate has a strong background in F&B, sharp floor management skills, commercial understanding, and the ability to drive both guest experience and revenue.

Key Responsibilities:

1. Restaurant Operations

• Oversee day-to-day front-of-house and back-of-house operations
• Ensure smooth service flow and consistent standards of hospitality
• Coordinate closely with kitchen, bar, and service teams
• Handle operational issues and guest concerns promptly and professionally

2. Guest Experience & Clientele

• Engage with guests, gather feedback, and build loyalty with regulars
• Personally handle VIP and key guests when required
• Drive guest satisfaction and repeat business

3. Sales & Business Development

• Own outlet sales and revenue targets
• Track daily, weekly, and monthly sales performance
• Drive upselling and increase average guest spend
• Build local networks and community relationships to generate new business

4. Beverage Sales

• Take ownership of beverage revenue and upselling with the service team
• Ensure proper control over beverage inventory, wastage, and variance
• Coordinate with the bar team on promotions and sales initiatives

5. P&L & Commercial Understanding

• Understand the outlet P&L and monitor sales against budgets
• Control food, beverage, and manpower costs
• Review daily sales and cost reports, spot leakage, and take corrective action

6. Team Management

• Hire, train, and motivate the restaurant team
• Set clear performance expectations, run briefings, and conduct performance reviews
• Plan schedules and manpower deployment
• Build a strong, service-oriented team culture

7. Events & Promotions

• Drive private parties, corporate events, and group bookings
• Partner with Marketing on promotions and guest activations

8. Cost Control, Hygiene & Compliance

• Monitor inventory, stock movement, wastage, and billing procedures
• Ensure compliance with company SOPs, food safety, sanitation, and licensing regulations
• Maintain operational documentation and reporting

What We're Looking For

• 5+ years of restaurant management experience with a proven track record in Indian F&B
• Strong leadership and team management skills
• Excellent communication and guest-handling skills
• Strong commercial mindset with a focus on revenue, profitability, and guest retention
• Bachelor's degree in Hospitality Management or a related field preferred.
• Willingness to work at any of our outlets across India
