Roccella Italian – New Opening

Roccella is growing, and we’re looking for an experienced Restaurant Manager to lead our new venue opening in Dromana, Mornington Peninsula.

This is a key leadership position within our group and a great opportunity for someone who wants to take ownership of a new venue from the beginning and grow with an expanding hospitality business.

The Role

As Restaurant Manager, you will be responsible for the overall day-to-day performance of the restaurant, including:

• Leading, training and developing the FOH team
• Building a strong service culture and maintaining high hospitality standards
• Managing rosters, labour costs and daily operations
• Recruitment and onboarding of new team members
• Monitoring sales, costs and key venue KPIs
• Working closely with the kitchen and senior management team
• Managing guest feedback and ensuring a consistently strong customer experience
• Maintaining Roccella’s standards, systems and procedures
• Taking ownership of the venue’s performance and results

About You

We’re looking for someone who:

• Has solid experience managing a busy, high-volume restaurant
• Is confident leading a large team
• Is organised, hands-on and comfortable working on the floor
• Understands labour management, rostering and restaurant financials
• Has strong communication and people-management skills
• Can hold high standards while creating a positive team environment
• Takes ownership and looks for solutions rather than waiting for direction
• Ideally has experience with Italian restaurants, premium casual dining or high-volume hospitality
