Job Summary

Gamaro Chicken is a Korean fried chicken brand expanding from Korea into the U.S. Our first American location opened in Koreatown a month ago, and we’re hiring the Restaurant Manager to run it.

The store is open and serving. What it needs now is someone to install the operating infrastructure that turns a working restaurant into a replicable one. Korea HQ brings an established concept and proven unit economics. This location is the U.S. proving ground for a franchise network, and the systems built here — prep standards, line checks, labor models, training paths, open and close procedures — become what every future operator receives on day one.

We’re looking for someone who has worked inside a multi-unit or franchise organization and understands why those standards exist, and who wants to be the one who writes them. You’ll report directly to ownership with real input on how this brand scales.

What You’ll Own

• Run daily operations across front and back of house, holding consistent execution through every shift
• Build and document the operating systems this location runs on — SOPs, prep sheets, line checks, par levels, open/close procedures — clear enough that a new operator in a new market could run from them
• Tighten execution in a store that’s one month in: identify what’s working, fix what isn’t, and standardize the result
• Hire, onboard, and schedule the team; set standards and hold people to them
• Protect product consistency on our core fried chicken program and sauces, where recipe adherence is the brand
• Own inventory, ordering, and vendor relationships; control waste against defined targets
• Manage food cost and labor cost to target; review P&L with ownership monthly and act on the variance
• Administer Clover POS — order flow, cash handling, daily reconciliation, and reporting
• Enforce food safety, sanitation, and California health code compliance without exception
• Resolve guest issues directly and in the moment
• Support local marketing and build relationships in the Koreatown community

What We’re Looking For

• 3+ years managing a restaurant, ideally within a multi-unit, franchise, or international brand where standards were defined and enforced across locations
• Experience stabilizing a new store through its first year, or rebuilding operations at an underperforming one
• Demonstrated ability to create operating procedures, not just execute them — show us something you built
• Strong command of food cost, labor cost, and inventory against targets, with the P&L literacy to explain variance
• Hands-on kitchen experience; comfortable stepping onto the line when the store needs it
• Working knowledge of POS systems (Clover experience a plus; we’ll get you up to speed)
• Familiarity with California food safety and health regulations; ServSafe certification or willingness to obtain one
• Direct, clear communication with staff, vendors, ownership, and guests
• Available nights and weekends
• Korean language ability is a plus. A significant share of our guests and vendors are Korean-speaking, and some recipe and HQ communication originates in Korean.

Compensation & Schedule

• $72,000 per year, plus performance bonus tied to store results
• Full-time, salaried exempt
