Restaurant Manager (Japanese Restaurant)

About the role

We are seeking an experienced and dynamic Restaurant Manager for our Japanese Restaurant to join Hong Kong Chromaelle Wine Industries Limited. This is a full-time position based at our location in Kowloon City District. As Restaurant Manager, you will be responsible for overseeing the day-to-day operations of our Japanese restaurant, ensuring exceptional service standards, and creating memorable dining experiences for our guests. This role is pivotal in maintaining the restaurant's reputation for excellence and driving business growth within the hospitality sector.

Key responsibilities

• Oversee daily restaurant operations, including table management, staff scheduling and guest service coordination
• Manage reservations systems and coordinate with the reservations team to optimise table allocations and guest experiences
• Maintain and enforce high standards of service quality, cleanliness and food presentation across all areas of the restaurant
• Train, mentor and supervise restaurant staff to deliver consistent, professional and courteous service
• Manage financial operations including budget control, cost monitoring and revenue optimisation
• Respond to guest feedback and complaints promptly, ensuring resolution and guest satisfaction
• Liaise with the kitchen team to ensure seamless coordination between front-of-house and back-of-house operations
• Promote and upsell dining experiences, special events and wine pairings to enhance revenue
• Maintain compliance with health and safety regulations, food hygiene standards and local hospitality legislation
• Analyse reservation data and dining patterns to support business planning and marketing initiatives

What we're looking for

• Minimum 3-5 years' experience in restaurant management, preferably within fine dining or Japanese cuisine establishments
• Proven expertise in managing reservation systems and optimising table management to maximise covers and revenue
• Strong understanding of Japanese culinary traditions, dining etiquette and presentation standards
• Excellent leadership and team management capabilities with the ability to motivate and develop staff
• Outstanding customer service skills with a passion for delivering exceptional guest experiences
• Proficiency in restaurant management software and point-of-sale systems
• Strong financial acumen with experience in budget management and cost control
• Fluency in English and Cantonese; Japanese language skills are advantageous
• Flexibility to work evenings, weekends and public holidays as required by the hospitality industry
• Relevant qualifications in hospitality management or food service are preferred
