The Senior Service Captain will play a key role in leading daily dining-room service and creating thoughtful, memorable guest experiences through precise, intuitive, and genuine hospitality.
Working closely with the restaurant management, culinary, beverage, and service teams, you will help maintain Aro’s service standards, guide junior team members, and ensure smooth communication throughout each service. The ideal candidate has experience in a refined-casual or fine-dining restaurant, is confident with food and beverage service, and demonstrates sound judgment when managing guest relations.
This is an opportunity to join a new restaurant from its opening stage and contribute meaningfully to the development of its culture, systems, and standards of hospitality.
Key Responsibilities
- Lead an assigned section of the dining room and ensure consistently attentive, professional, and well-paced service.
- Welcome guests warmly and oversee their experience from arrival through departure.
- Develop a thorough understanding of Aro’s food, wine, beverage, and hospitality philosophy.
- Present and explain menu items clearly, answer questions, and provide informed recommendations based on guest preferences and dietary requirements.
- Perform and supervise refined food and beverage service, including wine presentation, bottle service, beverage pouring, and appropriate glassware handling.
- Take and communicate orders accurately while following Aro’s established sequence of service.
- Coordinate the timing and delivery of food and beverages with the kitchen, bar, sommelier, and management teams.
- Monitor table progression, dining-room flow, and guest satisfaction throughout service.
- Build genuine relationships with guests while maintaining professionalism, discretion, and appropriate boundaries.
- Recognize returning guests and communicate relevant preferences or special occasions to the team.
- Address guest questions, concerns, and service-recovery situations calmly and thoughtfully, escalating matters to management when appropriate.
- Maintain table presentation, cleanliness, and readiness throughout service.
- Conduct section checks and support opening and closing duties, mise en place, side work, and dining-room preparation.
- Help lead pre-service briefings and communicate menu changes, guest notes, operational updates, and service priorities.
- Guide, coach, and support Servers and other junior team members during preparation and service.
- Ensure that the team follows established service procedures and presentation standards.
- Follow and reinforce all food-safety, hygiene, responsible alcohol service, and workplace-safety requirements.
- Participate actively in training sessions, tastings, and ongoing professional development.
- Support restaurant management with additional operational responsibilities when required.
- Contribute to a respectful, collaborative, and high-performing workplace.
Requirements
- Previous experience as a Captain, Senior Server, Chef de Rang, or in a comparable restaurant-service role.
- Demonstrated experience in a refined-casual or fine-dining restaurant environment.
- Strong knowledge of professional food and beverage service, including confident wine and bottle service.
- Proven ability to manage guest relations and respond thoughtfully to special requests, concerns, and service-recovery situations.
- Genuine interest in food, wine, beverages, and hospitality.
- Warm, confident, and polished communication skills.
- Strong attention to detail, organization, and situational awareness.
- Ability to lead an assigned section and support junior team members during a fast-paced service.
- Sound judgment and the ability to remain composed under pressure.
- A collaborative attitude, reliability, and commitment to continuous learning.
- Ability to stand and move throughout service and safely carry trays, plates, bottles, and service equipment.
- Availability to work rotating shifts, including evenings, weekends, and public holidays.
- Valid eligibility to work in Singapore.
What We Offer

- A leadership role in shaping the restaurant’s service culture and standards.
