Shift Manager
Prince of Peckham
Location: Peckham, South East London
Hours: Full-time, predominantly late-night and weekend shifts
Reports to: General Manager / Operations Manager
About Prince
Prince is a busy, high-volume, events-led pub in the heart of Peckham. We’re known for great music, big nights, excellent drinks and a strong sense of community.
We’re looking for an experienced Shift Manager to join the management team and take ownership of the site during some of our busiest trading periods, with a particular focus on late-night and weekend operations.
This is a hands-on role for someone who is confident leading a large team, maintaining high standards when the pressure is on and making sure guests have a brilliant experience from the start of their visit through to close.
The Role
As Shift Manager, you’ll be responsible for the smooth running of the pub during your shifts, particularly during busy evenings, late nights and weekends.
You’ll be visible on the floor, leading from the front and acting as the senior manager on duty when required. You’ll need to be comfortable making decisions quickly, managing competing priorities and keeping the team focused when the site is at its busiest.
You’ll work closely with the General Manager and wider management team to maintain Prince’s standards across service, people, safety and operations.
Key Responsibilities
SERVICE & GUEST EXPERIENCE
- Lead the team during busy evening and late-night services.
- Maintain consistently high standards of service, hospitality and guest experience.
- Be visible and approachable on the floor, particularly during peak trading.
- Deal confidently with guest queries, complaints and difficult situations.
- Monitor the pace and flow of service and react quickly to issues.
- Ensure the venue remains welcoming, clean and well presented throughout the shift.
- Support the delivery of events, DJs, parties and other programmed activity.
- Create an energetic but well-controlled atmosphere during late-night trading.
TEAM LEADERSHIP
- Lead, motivate and support the team throughout each shift.
- Delegate effectively and make sure everyone understands their responsibilities.
- Brief the team before service and communicate priorities clearly.
- Maintain high standards of behaviour, presentation and performance.
- Coach team members on the job and provide constructive feedback.
- Support the General Manager with training, development and performance management.
- Manage difficult conversations confidently and professionally when required.
- Ensure new and existing team members understand Prince’s standards and ways of working.
LATE-NIGHT & WEEKEND OPERATIONS
- Take ownership of the venue during late-night and weekend trading.
- Ensure licensing, safety and responsible service procedures are followed at all times.
- Manage queues, capacity and guest flow during busy periods.
- Work closely with security and the wider team to maintain a safe environment.
- Monitor guest behaviour and intervene appropriately when necessary.
- Manage incidents calmly and follow the correct reporting procedures.
- Oversee last orders, close-down and end-of-night procedures.
- Ensure the venue is left secure, clean and ready for the following day’s trade.
- Be prepared to make quick operational decisions during busy late-night services.
STANDARDS & OPERATIONS
- Maintain Prince’s standards across the bar, floor, toilets, cellar and back-of-house areas.
- Ensure opening, service and closing procedures are completed correctly.
- Monitor stock levels and communicate shortages or operational issues to the management team.
- Support effective stock control and minimise unnecessary wastage.
- Ensure equipment, tills and EPOS systems are being used correctly.
- Complete shift reports, incident reports and other required operational paperwork.
- Identify maintenance, health & safety and compliance issues and escalate where appropriate.
- Ensure all legal and company procedures are followed.
COMMERCIAL AWARENESS
- Understand the importance of sales, GP, labour and waste to the overall performance of the business.
- Lead the team to maximise sales while maintaining excellent service.
- Monitor staffing levels throughout the shift and communicate any issues to the General Manager.
- Minimise unnecessary wastage, breakages and comps.
- Encourage the team to upsell appropriately and confidently.
- Understand how operational decisions during a shift impact the wider business.
What We’re Looking For
We’re looking for someone who:
- Has previous experience in a busy pub, bar, restaurant or late-night hospitality environment.
- Has experience supervising or managing a team.
- Is confident leading a team during high-volume service.
- Is comfortable working late nights and weekends.
- Can stay calm, organised and decisive under pressure.
- Has excellent communication and people skills.
- Has a strong understanding of hospitality and what great service looks like.
- Takes pride in standards and notices the details.
- Is confident dealing with challenging guests and situations.
- Understands the importance of licensing, safety and responsible service.
- Is commercially aware and understands the relationship between great service and strong sales.
- Leads by example and is willing to get stuck in.
- Is reliable, punctual and takes ownership of their shifts.
- Wants to develop within a busy, growing hospitality business.
The Person
You’ll be the kind of manager who is comfortable being in the thick of it.
You won’t be afraid to jump behind the bar, clear a table, speak to a guest, support a team member or deal with an operational problem when things get busy.
You’ll know when to be hands-on and when to step back and lead your team.
Most importantly, you’ll understand that a great late-night operation isn’t just about getting through the shift. It’s about maintaining standards, looking after your team, protecting the guest experience and making sure everyone gets home safely at the end of the night.
What We Offer
- A key management role within one of Peckham’s best-known independent pubs.
- The opportunity to work within a busy, events-led venue.
- A hands-on role with genuine responsibility and autonomy.
- Training and development opportunities.
- The opportunity to progress within the wider business.
- A supportive management team and a strong, community-focused working environment.
If you’re an experienced hospitality supervisor or manager who thrives on busy services, late nights and leading a team, we’d love to hear from you.
