About Us

Town opened in April 2025 with a key focus on British produce and regenerative agriculture. The innovative menu, meticulous sourcing of ingredients, and sleek design won it immediate critical acclaim from respected journalists including Grace Dent, Jay Rayner, and Giles Coren. Now entering its second year, Town is expanding into the basement with the opening of two new PDRs and are in need of a new Sommelier to help develop and administer an extended wine programme.

The Role

We are looking for a knowledgeable and experienced Sommelier to join our team and elevate our wine offerings. In this role, you will assist the Head Sommelier in curating and managing the wine list, guiding our staff and guests in wine selections, and fostering a culture of wine appreciation throughout the restaurant.

Develop and maintain an innovative wine list, focusing on quality, value, and pairings with our seasonal menu.

Provide wine training and education to staff to enhance their wine knowledge and service skills.

Manage wine inventory, including ordering, stock levels, and proper storage practices.

Stay current on wine trends and develop relationships with reputable wine suppliers.

At least 1 year's previous experience as a Sommelier in a high-end restaurant environment.

Confidence on the floor handling busy services, with an engaged and personable nature with guests and the ability to recommend pairings sensitive to the menu and the guests’ needs.

Organisation and attention to detail in the management of service and stock control. Experience with stock management systems such as Marketman and Hops would be a great plus.

Legal right to work in the UK and flexibility to work evenings and weekends.
