About the role
A new restaurant opening in 2027 is seeking an experienced Sommelier who combines strong wine knowledge with engaging, intuitive service. You will make wine approachable, build trust with guests and contribute to a beverage programme with both personality and commercial discipline.
Key responsibilities
- Support the development of the wine list and pairing selections
- Deliver knowledgeable, personalised wine recommendations and service
- Manage cellar organisation, stock accuracy and appropriate wine storage
- Work closely with the culinary and service teams to create a cohesive dining experience
- Develop the team's wine knowledge and encourage confident, responsible selling
About you
- Proven sommelier experience in a fine-dining environment
- Strong knowledge of wine regions, producers, vintages and food pairing
- A recognised wine qualification is advantageous
- Good spoken English and Chinese; Cantonese and/or Mandarin
- Polished presentation and the ability to engage guests without pretension
- Composure under pressure and a collaborative, accountable working style
