Sou Chef

About the role

A new restaurant opening in 2027 is seeking an accomplished Sous Chef to support kitchen leadership and help build a disciplined, high-performing culinary team. You should be a hands-on leader who combines strong technical ability with clear communication and sound judgement, comfortable setting demanding standards, developing others and taking responsibility for consistent execution.

Key responsibilities

• Support the Head Chef in pre-opening preparations, kitchen setup and daily operations
• Lead preparation and service, maintaining consistency in flavour, presentation and timing
• Train and mentor junior chefs, providing clear direction and constructive feedback
• Contribute to menu development, recipe testing and standardisation
• Oversee ordering, stock control, ingredient utilisation and food-cost discipline
• Maintain rigorous food safety, hygiene and equipment-care standards
• Coordinate closely with the front-of-house team on service pacing, dietary requirements and guest requests

About you

• Proven experience as a Sous Chef, or a strong track record as a senior Chef de Partie ready to step up, within fine-dining restaurants
• Excellent cooking techniques, ingredient knowledge and quality-control skills
• Strong organisational ability and experience coordinating kitchen service
• Ability to communicate effectively in English and Chinese; Cantonese and/or Mandarin
• A calm, decisive approach under pressure
• The confidence to uphold standards while treating colleagues with respect
• A drive to excel, supported by accountability, humility and a collaborative working style
• Pre-opening experience is an advantage
