Sourdough Baker – Havn Bakery, Bridge of Allan

We’re looking for a baker to join our team at Havn Bakery, working primarily on our sourdough bread production.

We’re an independent bakery in Bridge of Allan producing sourdough breads, laminated pastries and cakes from scratch, with a strong focus on quality, consistency and good ingredients.

The role will mainly involve working alongside our Head of Bread to produce our daily range of sourdough breads.

The role will include:

• Mixing, scaling and shaping sourdough
• Managing fermentation and dough development
• Preparing and maintaining starters and levains
• Baking and finishing our daily bread range
• Helping maintain consistent quality across production
• Keeping the bakery clean, organised and ready for the next day
• Supporting other areas of production when required

We’re looking for someone with previous professional baking experience, ideally with sourdough or long-fermentation bread.

You should be comfortable working independently, have a good understanding of dough and fermentation, and be able to work consistently to a high standard.

This is a full-time role, working across the days not covered by our Head of Bread, so reliability and the ability to take ownership of bread production are important.

There will also be opportunities to develop your skills across other areas of the bakery, including pastry and laminated doughs.
