Sous Chef

Management leadership position accountable for overall daily success of kitchen. Practice and demonstrate culinary principals and ability by personally demonstrating tasks while at the same time leading associates and supervisors to achieve established goals and objectives. Diligently works to improve culinary performance of department and overall guest satisfaction. Consistently strives to enhance and provide guests with an outstanding experience. Responsible for developing and mentoring all associates. Assists culinary management with cost controls in regards to food and labor, scheduling, sanitation, associate disciplinary documentation and any other assigned administrative duties

ESSENTIAL JOB DUTIES

· Follow all department and or company policies and procedures

· Report all work related accidents or injuries immediately

· Support and treat all fellow associates, hotel leadership and hotel guests with respect

· Ensure proper local area and corporate sanitation procedures in regards to area and or kitchen cleanliness at all times

· Routinely inspect kitchens to ensure equipment is functioning properly. If equipment does not meet standards, communicate to hotel engineering and follow up to ensure completion

· Knowledge of emergency procedures and ability to maintain composure if a situation arises

· Talk and effectively listen to other associates when communicating concerns

· Develop and constantly improve positive relationships with associates in the culinary division as well as other departments in the hotel

· Communicate overall management objectives and goals to associates

· Confront underperforming associate skill sets to improve production and overall associate performance

· Department leader or role model in regards to personal job performance, attention to detail, speaking with respect, appearance, sanitation, work quality and quantity

· Encourage and motivate associates and supervisors around you to perform at top levels in all aspects of their position

· Ability to quickly asses a situation and devise a quick thought provoked decision to resolve an issue or situation

· Constantly develop all associates to enhance skill set in all areas

· Coach and develop others by identifying any development or sub performing areas of associate performance. Mentor associate to constantly improve these areas through personal demonstration or providing necessary tools to increase associate knowledge and performance

· Exceed the guests expectations to drive overall satisfaction and also to gain guest loyalty and improved market share
