What they need
Sous Chef
The Springer Spaniel Pub | Treburley, Cornwall
Are you a passionate, experienced chef looking for your next challenge in a busy, growing pub with an excellent reputation?
The Springer Spaniel is looking for a talented, motivated and highly organised Sous Chef to join our kitchen team.
We are a well-established, growing business with an amazing reputation for our food, service and customer experience. We take pride in what we do and are looking for someone who shares our passion for delivering high-quality dishes, maintaining excellent kitchen standards and working as part of a strong, dedicated team.
This role would suit an experienced chef who thrives in a fast-paced kitchen environment, is confident taking charge of a service and wants the opportunity to showcase their culinary skills while playing an important role in the continued success of our business.
The Role
As Sous Chef, you will work closely with our Head Chef to ensure the smooth running of the kitchen, delivering consistently high standards of food quality, presentation and service.
You will be responsible for running the kitchen independently on 3–4 evenings per week, taking the lead during busy services and ensuring the team works efficiently and professionally.
We are looking for someone who can bring their own initiative, ideas and experience to the role while understanding the importance of teamwork, consistency and following the Head Chef's direction.
Your main responsibilities will include:
- Taking the lead in the kitchen and managing services confidently during busy periods.
- Leading, supporting and motivating the kitchen team to ensure smooth and efficient service.
- Working closely with the Head Chef and following their direction to maintain consistency across the menu and kitchen operations.
- Preparing, cooking and presenting dishes to a high standard, with the opportunity to showcase your skills and talents within the trade.
- Managing kitchen orders, monitoring stock levels and helping ensure produce is ordered efficiently and waste is kept to a minimum.
- Maintaining excellent organisation, preparation and cleanliness throughout the kitchen.
- Ensuring all food safety, hygiene and health and safety procedures are followed at all times.
- Assisting with menu planning, dish development, stock control and food costing. Experience in these areas is beneficial, but training and support can be provided where needed.
- Using your own initiative to solve problems, manage service pressures and keep the kitchen running smoothly.
- Helping maintain the high standards and reputation that our customers have come to expect from The Springer Spaniel.
About You
We are looking for a chef who is confident, capable and ready to take responsibility.
Previous experience in a very busy kitchen environment is essential. You must understand the pressures of a busy service, be able to work at pace without compromising on quality and remain calm, organised and professional when things get hectic.
The ideal candidate will:
- Have proven experience working in a fast-paced, high-volume kitchen.
- Be confident leading a team and taking responsibility for kitchen service.
- Be comfortable handling orders, monitoring stock and keeping on top of kitchen organisation.
- Have the initiative to work independently, make sensible decisions and resolve problems as they arise.
- Be able to lead a team when required, while also working collaboratively and following the Head Chef's instructions and standards.
- Take pride in their cooking, presentation and consistency.
- Have excellent communication skills and a positive, professional attitude.
- Understand the importance of food hygiene, food safety and health and safety compliance.
- Be reliable, flexible and committed to maintaining high standards.
- Be passionate about food and keen to contribute to a business that is continually developing and growing.
We want someone who can strike the right balance between being a strong, independent chef and a dependable team player. You should be confident enough to take charge when needed, but equally comfortable working under the Head Chef's guidance to ensure the whole kitchen delivers as one team.
Working Hours and Work-Life Balance
One of the benefits of this position is that your working hours are condensed into four days per week, giving you a three-day break each week.
- Working pattern: Four days per week, with a three-day break.
- Typical working hours: 10am until close, excluding Sundays, when working hours will differ.
- Flexibility: Availability to work the days and shifts required by the business, including busy service periods.
This is an opportunity to work in a demanding but rewarding kitchen environment while enjoying three days away from work each week.
Exact shifts and working arrangements can be discussed during the recruitment process.
