Japanese Speaking Required. Position: Stewarding Manager Department: Stewarding

Reports to: Executive Chief

Stewarding Manager We are currently seeking Stewarding Manager to join Shangri-La Kyoto FB team.

In this role, you will be responsible for overseeing the effective and efficient operation of the Stewarding Department, ensuring the highest standards of cleanliness, hygiene, health and safety across all Food & Beverage areas. You will manage stewarding operations, including cleaning processes, stock control, equipment maintenance, and compliance with company standards and policies.

Working closely with the Executive Chef, Director of Food & Beverage, Restaurant Management, Service Teams, and Housekeeping, you will foster strong communication and collaboration to ensure exceptional operational standards and guest experiences. As a member of the Food Safety Management Team (FSMT), you will contribute to the development, implementation, and continuous improvement of food safety management systems, documentation, and HACCP plans to support regulatory compliance and operational excellence.

• Manage Inventory, Equipment & Cost Control
• Ensure Food Safety, Hygiene & Sanitation Standards
• Lead, Train & Develop the Stewarding Team
• Foster Effective Communication Across Departments
• Maintain Health, Safety & Environmental Compliance

■ Requirements

• Strong communication skills with a professional and positive attitude
• Fluency in Japanese and the ability to communicate effectively in English
• HACCP certification and a good understanding of food safety and hygiene standards
• Relevant food safety certifications recognized by local authorities
• Commitment to teamwork, professionalism, and continuous improvement
• Minimum 3 years of leadership experience in Stewarding or a similar operational role within an international hotel environment
• Good computer literacy and administrative skills
• Flexibility to work according to operational requirements
• Additional language skills (Preferred)
• Experience in a similar luxury hotel environment (Preferred)
• Additional training or development programs related to Food & Beverage operations (Preferred)
• Degree or diploma in Environmental Health, Food Hygiene, Chemical Studies, or a related field (Preferred)
• Flexibility regarding work location (Preferred)

Director of Sales このポジションでは、スチュワーディング部門の円滑な運営をリードし、館内の料飲施設における清潔さ・衛生管理・安全基準の維持向上を担っていただきます。エグゼクティブシェフや料飲部門、ハウスキーピングをはじめとする関係部署と連携しながら、質の高いサービス提供を支える重要な役割を担います。また、食品安全管理チームの一員として、HACCPを含む食品安全管理体制の継続的な改善にもご尽力いただきます。

■ 主な業務内容

• スチュワーディング部門の運営・管理
• 食器・グラス・カトラリー・厨房機器の在庫および品質管理
• 衛生管理、食品安全管理およびHACCP基準の遵守
• 部門予算、人件費および運営コストの管理
• チームメンバーの採用、育成、指導およびパフォーマンス管理
• 調理部門・料飲部門・ハウスキーピングとの連携による円滑なホテル運営のサポート
• 安全で快適な職場環境の維持および法令遵守の推進
• 環境保全活動およびサステナビリティ施策の推進

■ 応募資格

• 日本語で円滑なコミュニケーションができ、基礎的な英語力をお持ちの方
• HACCPを含む食品安全・衛生管理に関する知識および関連資格をお持ちの方
• 国際的なホテルまたは同等のホスピタリティ業界において、スチュワーディングまたは関連部門でのマネジメント経験を3年以上お持ちの方
• 高い衛生意識と安全管理意識を持ち、チームワークを大切にできる方
• 基本的なPCスキルをお持ちの方
• 柔軟な勤務時間に対応できる方
• プロフェッショナルな姿勢と向上心を持ち、主体的に業務に取り組める方
• 英語以外の外国語スキルをお持ちの方（歓迎）
• ラグジュアリーホテルでの勤務経験をお持ちの方（歓迎）
• 環境衛生、食品衛生、化学関連分野の学位または資格をお持ちの方（歓迎）
• Food & Beverage関連の専門研修や資格をお持ちの方（歓迎）
