What they need
About the role
Bastanee is looking for one Parlour Manager to run both of our ice cream parlours, in Notting Hill and Hammersmith, for a salary of £38,000 on a 45-hour week.
Bastanee is an ice cream brand with a warm, playful identity, serving ice cream, hot and iced drinks and a growing matcha range. You will be the person who makes both sites feel the same: friendly, spotless, safe and on-brand every day we are open. You will lead the teams at both parlours, own the day-to-day numbers and be the main point of contact for the directors.
Key responsibilities
You are accountable for how both parlours trade, how the teams feel and whether every customer leaves happy and safe. In practice that means:
People and rota
- Recruit, train, coach and manage the team at both sites, including team leaders and part-time and student staff.
- Build and publish weekly rotas for both parlours that match staffing to demand and stay inside the labour budget.
- Run inductions, one-to-ones and performance conversations, and handle absence, holidays and discipline fairly.
- Be visible on the floor at both sites each week and cover shifts when the rota needs it.
Customer experience and brand
- Make sure every customer gets a warm welcome, quick service and a consistent Bastanee experience.
- Keep both parlours clean, stocked and on-brand, including displays, menus, signage and window promotions.
- Respond to customer feedback and online reviews, and fix recurring problems.
- Support local marketing, school and community partnerships and seasonal promotions.
Food safety, allergens and health & safety
- Run both sites to the standard needed for a top food hygiene rating, with up-to-date HACCP records, temperature checks and cleaning schedules.
- Make sure every team member understands allergen rules and can answer allergen questions correctly, in line with UK law.
- Keep health and safety, fire and equipment checks, training records and incident logs complete and in date.
Stock, cost control and cash
- Order stock, manage supplier relationships and delivery checks, and keep waste and shrinkage low.
- Control gross profit and labour cost against the targets the directors set.
- Oversee daily cash-up, banking and till procedures, and card payments at both sites.
Reporting and operations
- Review daily sales, labour and customer data in our analytics platform and report weekly to the directors with clear actions.
- Keep equipment (coffee machines, freezers) serviced, and escalate faults and repairs quickly.
- Keep opening and closing routines, standard operating procedures and the operations manual current and followed.
Who you are
You have run a busy food or drink venue, you are calm when it is busy, and you like building a team more than giving orders.
Essential
- At least 2 years' experience managing a restaurant, café, dessert or ice cream business, or a multi-unit hospitality role.
- Proven experience leading and rotating a team, including young and part-time staff.
- Level 2 Food Safety certificate or higher (Level 3 preferred), and working knowledge of allergen law and HACCP.
- Comfortable reading sales, labour and stock figures and acting on them.
- Right to work in the UK.
- Flexible across evenings, weekends and bank holidays, including peak summer trading, within a 45-hour week.
Desirable
- Experience managing more than one site.
- Personal Licence or health and safety qualification (for example, Level 3 or IOSH).
- Experience of barista-style coffee or matcha service.
- Confident with till, rota, stock management and analytics software.
- Interest in local partnerships, schools and social media.
Qualities
- Warm, upbeat and approachable with customers and staff.
- Organised and reliable, with an eye for detail and standards.
- A self-starter who can run two sites without constant supervision.
Terms
The role is full time and permanent at £38,000 a year for a 45-hour week.
