Drunken Monk Izakaya is looking for an experienced and motivated Sushi Chef to join our team. We are an izakaya-style Japanese restaurant specializing in high-quality ingredients, fresh seafood, sushi, sashimi, and binchotan charcoal-grilled dishes.

Responsibilities

• Prepare and serve high-quality sushi, sashimi, and nigiri
• Handle and prepare fresh fish, including filleting, portioning, and proper storage
• Prepare sushi rice, sauces, garnishes, and daily mise en place
• Maintain consistent food quality, presentation, and portion control
• Maintain a clean, organized, and sanitary sushi station
• Monitor seafood quality and inventory
• Follow proper food safety and sanitation procedures
• Work closely with the kitchen and front-of-house team during service
• Assist with seasonal dishes and menu development
• Maintain a professional and positive working environment

Qualifications

• Previous experience as a Sushi Chef required
• Strong knife skills and fish butchery experience
• Strong knowledge of sushi and Japanese cuisine
• Experience preparing nigiri and sashimi
• Ability to work efficiently in a fast-paced restaurant
• Strong attention to detail and presentation
• Reliable, responsible, and team-oriented
• Food Handler certification preferred
• Japanese restaurant or izakaya experience is a plus

Schedule

Full-time position. Evening, weekend, and holiday availability is required.
