Sushi Chef

About the Role

We are looking for a passionate Sushi Chef to join our fine dining Japanese restaurant. You will prepare high-quality, authentic dishes using premium ingredients, while working with the team to create a warm and memorable dining experience for our guests.

Responsibilities:

• Prepare sushi and sashimi using proper techniques to ensure authentic taste and elegant presentation.

• Fillet and process whole fish, including all preparation and mise en place.

• Maintain cleanliness of workstation, tools, and equipment.

• Prevent cross-contamination and ensure proper food storage.

• Check ingredient quality and freshness (especially seafood).

• Engage with guests at the counter — explain dishes, make recommendations, and deliver a memorable dining experience.

• Maintain strict hygiene standards in line with HACCP requirements.

• Support daily kitchen operations and work as a team during service.

Requirements:

• Minimum 2 years of relevant experience in sushi preparation and culinary techniques.

• Experience with omakase or sushi counter service will be an added advantage.

• Good knife handling and food preparation skills.

• Strong knowledge of HACCP and food safety standards.

• Basic communication skills and a service-oriented attitude.

• Strong organisational, leadership, and teamwork skills.

• Flexibility to work split shifts, including weekends and public holidays.
