About Grotto by Masaki Saito

Grotto by Masaki Saito is an intimate Japanese omakase restaurant located at the prestigious Hazelton Hotel in Toronto. We are dedicated to delivering an exceptional dining experience through quality ingredients, precise craftsmanship, attention to detail, and warm, professional hospitality.

We are seeking a motivated, detail-oriented, and passionate Sushi Support Cook to join our culinary team. This role is ideal for someone who wants to develop their Japanese culinary skills while supporting the team in delivering a high standard of omakase dining.

Job Summary

The Sushi Support Cook will assist the sushi chefs with daily kitchen preparation, ingredient handling, station organization, and service execution. The successful candidate will demonstrate a strong work ethic, a willingness to learn, and the ability to maintain a clean, organized, and efficient working environment.

Previous experience in a Japanese restaurant or sushi kitchen is an asset, but we welcome candidates who are eager to learn and grow within a professional culinary team.

Key Responsibilities

  • Assist sushi chefs with daily mise en place and preparation of ingredients for omakase service.
  • Wash, trim, portion, and prepare fish, seafood, vegetables, and other ingredients as directed by senior chefs.
  • Assist with rice preparation, including washing, cooking, seasoning, and maintaining proper holding conditions when required.
  • Prepare sauces, garnishes, condiments, and other supporting components according to the chef’s standards.
  • Maintain cleanliness, organization, and readiness of assigned kitchen stations before, during, and after service.
  • Follow proper food safety, sanitation, and temperature-control procedures, particularly when handling raw fish and seafood.
  • Assist with receiving, inspecting, labeling, storing, and rotating ingredients according to established procedures.
  • Support sushi chefs during service by replenishing ingredients, preparing necessary items, and responding promptly to kitchen requests.
  • Maintain kitchen equipment, tools, and work surfaces in excellent condition.
  • Minimize food waste and handle ingredients carefully to maintain quality and consistency.
  • Follow instructions from the Head Chef, Sous Chef, and senior culinary team members.
  • Perform other kitchen duties as required to support smooth daily operations.

Qualifications and Requirements

  • Previous experience in a professional kitchen is preferred; sushi or Japanese cuisine experience is an asset.
  • Basic knowledge of food preparation, knife handling, and kitchen sanitation is an advantage.
  • A genuine interest in Japanese cuisine, sushi, and omakase dining.
  • Strong attention to detail and a commitment to quality and consistency.
  • Ability to work efficiently in a fast-paced, high-standard kitchen environment.
  • Positive attitude, strong work ethic, and willingness to learn from senior chefs.
  • Good communication skills and the ability to work collaboratively as part of a team.
  • Ability to follow food safety procedures and maintain a clean, organized workspace.
  • Flexibility to work evenings, weekends, and holidays as required by the restaurant's operating schedule.
  • Legally authorized to work in Canada.

What We Offer

  • The opportunity to work in a premium Japanese omakase restaurant.
  • Hands-on learning and development under experienced sushi chefs.
  • Exposure to high-quality seafood, Japanese ingredients, and professional omakase kitchen operations.
  • A supportive and professional team environment.
  • Opportunities to develop culinary knowledge and skills as the restaurant grows.
  • Compensation based on experience and qualifications.
