Technical Operator

Key Responsibilities

Pilot Plant Operations

• Operate pilot-scale ice cream manufacturing equipment, including:

• Mix preparation systems

• Pasteurizers

• Homogenizers

• Ageing tanks

• Continuous freezers

• Fruit feeders

• Extrusion and filling equipment

• Chocolate coating and packaging equipment

• Prepare and process ice cream mixes as per trial plans and development briefs.

• Execute pilot plant trials independently and support factory scale-up trials.

• Record process parameters, observations, and trial results accurately.

Equipment Maintenance

• Ensure all pilot plant equipment remains in safe and working condition.
• Conduct routine preventive maintenance and coordinate major repairs with engineering teams and suppliers.
• Maintain equipment logbooks, maintenance records, and service schedules.
• Manage change parts, tools, and spare inventory.

Safety, Quality & Hygiene

• Follow all site safety, food safety, and GMP requirements.
• Conduct pre-startup safety checks before operation.
• Ensure pilot plant cleanliness, housekeeping, and 5S standards.
• Support risk assessments, SOP preparation, and safety audits.
• Ensure compliance with hygiene and quality systems.

Trial & Product Development Support

• Produce pilot-scale samples for innovation and renovation projects.
• Support formulation, process optimization, and troubleshooting activities.
• Collect processing and manufacturing data for analysis and scale-up recommendations.
• Assist in sensory and analytical evaluation activities.

Inventory & Resource Management

• Manage raw materials, ingredients, packaging materials, and consumables for lab &pilot plant- trials.
• Ensure timely replenishment of materials and spare parts.
• Maintain records of inventory usage and stock levels.

Documentation

• Maintain batch records, equipment logs, cleaning records, and trial reports.
• Prepare and update SOPs, work instructions, and operational procedures.
• Support documentation required for audits and compliance activities.
• Digital inventory & documentation

Qualifications & Experiences

• 10th with 7-8 yrs experience / ITI with 4-5 yrs experience / Diploma with 2-3 yrs experience in ice cream / Dairy / Food / Refrigeration etc
