- Monitoring Food Cost, Beverage Cost, dan COGS sesuai target perusahaan.
- Melakukan stock opname dan memastikan kesesuaian stok fisik dengan sistem.
- Mengontrol penggunaan bahan baku, waste, spoilage, dan variance.
- Melakukan HPP/recipe costing untuk produk/menu.
- Menganalisis selisih antara actual cost vs budget/target.
- Monitoring harga bahan baku dan perubahan harga dari supplier.
- Memastikan penggunaan bahan sesuai standard recipe dan portioning.
- Membuat laporan cost, inventory, waste, dan variance secara berkala.
- Melakukan monitoring dan analisis cost di setiap outlet.
- Berkoordinasi dengan Finance, Purchasing, Warehouse, dan Operations.
- Mengidentifikasi potensi cost saving dan efisiensi operasional.
