หน้าที่และความรับผิดชอบ
- ควบคุมและดูแลการทำงานในครัว
ตรวจสอบให้แน่ใจว่าการเตรียมและปรุงอาหารเป็นไปตามมาตรฐานของร้าน ทั้งในด้านรสชาติ ความสะอาด และการจัดจาน
- สนับสนุนหัวหน้าเชฟ (Executive Chef)
ช่วยวางแผนเมนู ควบคุมต้นทุน และดูแลการจัดซื้อวัตถุดิบ
- บริหารจัดการทีมครัว
แบ่งงานให้กับพ่อครัวแม่ครัวแต่ละคน ฝึกอบรมพนักงานใหม่ และแก้ไขปัญหาภายในทีม
- ควบคุมคุณภาพและสุขอนามัย
ตรวจสอบความสะอาดของครัว อุปกรณ์ และการจัดเก็บวัตถุดิบให้เป็นไปตามมาตรฐานสุขอนามัย
- ดูแลความพร้อมของครัว
ตรวจสอบสต็อกวัตถุดิบ และประสานงานกับฝ่ายจัดซื้อเมื่อต้องการเติมสินค้า
- แทนที่หัวหน้าเชฟเมื่อไม่อยู่
รับผิดชอบในการตัดสินใจและบริหารงานครัวในกรณีที่หัวหน้าเชฟไม่อยู่ปฏิบัติงาน
